The botanicals at the heart of this London Dry Gin are foraged sorrel and garden-grown lemon balm, herbaceous plants native to the Kingdom of Fife. Both of these bygone botanicals have been traditionally cultivated in Scotland and were carefully selected by our distiller for their wild citrus and herbaceous flavours. The recipe also includes apples from East Neuk Orchards and a touch of lavender to add a subtle floral bouquet to balance the tangy flavours.
